I want to become a psychologist, and I was told that volunteer work would help a lot, both personally and academically. And I'm really into the idea... but I've looked around, and tbh, there's not much on volunteer work in mental health.
Does anyone know anywhere in North Manchester that would do this sort of thing?
Or any place in general? Hospitals? Care centres?

Contact your community mental health center. Google 'mental health' and 'clubhouses'. Also look into support groups - there are many for depression, anxiety disorders, post-traumatic stress, etc. You could also determine a need and start a support group of your own. Just dealing with people who have mental illness will give you good training and experience, formal or not. Good luck.
